Ms. Vy doesn’t cut any corners, when you take her class you come away with a real understanding of Vietnamese cuisine, culture and the health promoting qualities of food.
The class attended involved an extensive educational tour of the local market. As you tour the market, you’ll learn the names of the fresh, preserved and dried foods you have never seen before and learn how to use them.
Evidently
what you see and learn varies as there are many seasonal foods. We were shown how to choose a ripe mango, how to select
seafood, what fresh green tea looks like and how to stand our ground with the pushy motorbike drivers
barging through the markets.
You’ll have to come to Hoi An and take the class to learn how to make the delicious grilled chicken with turmeric and lime leaves and a refreshing green papaya salad.
